There will be a problem if the user has local sync configured and group policy has redirected their document directories. The Windows Sync setup local, which has never been as up-to-date as the folder redirects in GPO, will take over when you delete the group policy and instruct the server to put files back into the local profile. As a consequence, in trying to keep up with the local Windows sync, the PCs are removing the more recent files on the GPO redirect. When you are trying to get back the lost files, there are some methods you can try:
1. Search for the deleted files under the C:\Users folders, and maybe your lost files are just in some temporary folders or just hidden. For hidden files, you can show hidden files using CMD with attrib -h -r -s //s //d G:\\*.* command.
2. Don't bother to find your lost files in Recycle Bin. The files deleted from redirected folders will not show up in Recycle Bin. You can try to use Windows Backup and Restore option to find your lost files in recent backups.
