My Windows 2008R2 domain has roaming profiles with desktop and document redirects to a server up to this point. After each user received a laptop, I erased the roaming profile a week later without any problems. Then I discover certain files are missing. How can I get them back?

There will be a problem if the user has local sync configured and group policy has redirected their document directories. The Windows Sync setup local, which has never been as up-to-date as the folder redirects in GPO, will take over when you delete the group policy and instruct the server to put files back into the local profile. As a consequence, in trying to keep up with the local Windows sync, the PCs are removing the more recent files on the GPO redirect. When you are trying to get back the lost files, there are some methods you can try:
1. Search for the deleted files under the C:\Users folders, and maybe your lost files are just in some temporary folders or just hidden. For hidden files, you can show hidden files using CMD with attrib -h -r -s //s //d G:\\*.* command.
2. Don't bother to find your lost files in Recycle Bin. The files deleted from redirected folders will not show up in Recycle Bin. You can try to use Windows Backup and Restore option to find your lost files in recent backups.
3. If you are failed to get back your data, maybe it won't go wrong to choose a data recovery program. EaseUS Data Recovery Wizard is workable to solve your problem. It supports format recovery, deletion recovery, NAS recovery, partition recovery, and RAW recovery. Your lost pictures and personal documents can be recovered easily with this tool.
